It’s not just smooth-as-silk general manager George Pagani or Sommelier Jason Smith — the youngest master sommelier in the United States — who make service here so special. Michael Mina expects his waitstaff to know the menu and wine list thoroughly. So it’s no surprise that the 15 front waiters — four women and 11 men — aided by five runners (the people who physically bring the food from the kitchen to the table) undergo constant and rigorous weekly food and wine seminars.
Furthermore, all front waiters have passed the first stage of the master sommelier exam themselves, so they can speak knowledgeably about wine and food pairings. Add in the elegant uniforms, personally designed by Chef Mina, and the fact that the dining room seats a manageable 130, and you’ve got a service package hard to beat here. Or anywhere else, for that matter.
